This garlicky eggplant spread is has a spicy harissa paste base which goes nicely with the smokiness coming from the eggplants.
Ingredients
- 2 Eggplants (medium, roughly 2lbs), washed & pat dried
- 2 Tbsp, Harissa Paste
- 2 Tbsp, Extra Virgin Olive Oil
- 2-3 Garlic Cloves, minced
- 4 Olives
- 1 Tbsp, Low Fat Yogurt
- 1 Tsp, Salt
- 1 Tsp, Coriander
- 1 Pinch, Smoked Paprika
