Vietnamese Daikon and Carrot Pickles (Do Chua)
Easy to make, Vietnamese do chua are slightly sweet pickled carrots and daikon radishes. Eat straight, add to bánh mì, slip into spring rolls, or top hot dogs with them.

- 2 pounds of daikon radishes (about 2 large daikon), peeled
