Ingredients

• 1 large eggplant, cut into 1-cm (1/2-inch slices)
• 2/3 cup olive oil
• 1 pound extra lean ground beef
• 1 onion, chopped
• 2 cloves garlic, chopped
• 1 pinch ground cinnamon
• 1 pinch ground cloves
• 1 pinch ground ginger
• 1/2 cup white wine
• 1 can diced tomatoes (14oz)
• 1/2 cup chopped flat-leaf parsley
• 1/2 cup breadcrumbs
• Salt and pepper
• 1 tablespoon butter
• 1 tablespoon unbleached all-purpose flour
• 1 cup plain yogurt (4% MF or lighter)
• 1/4 cup grated Parmigiano-Reggiano
• 1 egg yolk
• 1 pinch ground nutmeg
