Lemon Thyme Rhubarb Cake – World Spice

Ingredients

• 3 cups rhubarb, cut into 1/2 inch pieces
• 1/2 cup sugar
• 1/2 cup water
• 1/2 cup butter, softened, plus extra for pan
• 3/4 cup white sugar
• 2 eggs
• 1 teaspoon baking powder
• 2 teaspoons Lemon Thyme
• 1 tablespoon lemon juice (zest first & save the zest for the topping)
• 1/4 teaspoon Pacific Flake Sea Salt
• 1 cup all-purpose flour, sifted, plus extra for dusting pan
• 1-1/2 teaspoons Lemon Thyme
• zest of one lemon
• 2 tablespoons white sugar
