• 50g Dark brown sugar
• 25ml of vermont maple syrup
• 2 large eggs
• 4 medium carrots grated
• 120 ml vegetable oil
• 75g buckwheat flour
• 75g of white spelt flour
• 1/2 tsp mixed spice
• 1tsp cinnamon
• 1/2 tsp baking powder
• 1/2 tsp bicarb of soda
• 50g goji berries
• 250g of mascarpone
• 1tbs of icing sugar
• choppec walnuts and goji berries to finish (optional)
