- 1 tsp honey
- 1 tablespoon cold butter
- Fresh parsley, chopped (for garnish)

- 1/2 cup chardonnay vinegar
- 3 black peppercorns
- 1 shallot sliced
- 1 bay leaf
- Sprig of thyme
