Ingredients

• 1 medium white onion
• 2 cloves garlic
• 1 thumb-sized piece ginger
• 1 medium carrot
• 1/2 teaspoon ground turmeric
• 1 tablespoon medium curry powder
• 1.8 oz dried red lentils
• 1 sweet potato
• 1 x 14 oz tin chopped tomatoes
• 8 1/2 oz chickpeas
• 1 x 14 fl oz tin light coconut milk
• 2 large handfuls of baby leaf spinach
• 1 tablespoon almond butter
• 1 lime
• drizzle of olive oil
• pinch of sea salt & black pepper
