Turkey Tetrazzini – Fustini's Oils & Vinegars

Ingredients

• 2 tablespoons butter
• 2 tablespoons Fustini's Tuscan Herb olive oil
• 1/4 cup onion, finely minced
• 1/4 celery, finely diced
• 1/4 cup mushroom, finely chopped
• 3 garlic cloves, minced
• 3 tablespoons flour
• 2 cups turkey or chicken stock
• 1/2 cup heavy cream
• 2 cups cooked turkey meat
• 1/4 cup parmesan cheese, finely grated
• salt and pepper to taste
• 1 pound pappardelle pasta (or another long noodle) cooked according to package
• fresh chive, garnish
