Ingredients
- 2-3 chicken breasts, depending on size and eaters. You can also use tofu or shrimp
- 1 tablespoon neutral or coconut oil
- 1/2 onion, thinly sliced
- 2 garlic cloves, finely chopped
- 2 Thai chilies, sliced in half, remove seeds for less heat, or 1/2 red jalepeño
- 3-inch Galangal or ginger, skin removed and finelysliced
- 1 lemongrass stalk, pound down, remove tough outer layer, and slice in 1/4 inch pieces
- 2 teaspoons Thai red curry paste
- 4 cups chicken broth, good quality or homemade
- 4 cups (about 2 cans) of coconut milk
- 1/2 pound white mushrooms, cleaned and sliced
- 1-2 teaspoons coconut or brown sugar
- 1-2 tablespoons fish sauce, taste and adjust
- 2-3 tablespoons lime juice
- cilantro leaves
- scallions, sliced in 1/4 inch pieces.
