- 1 teaspoon apple cider vinegar
- 6 cups of fresh sweet cherries, pitted

- 1 tablespoon fresh orange juice
- 1 teaspoon orange zest
- ½ cup dark brown sugar
- ¼ cup granulated sugar
- generous pinch of salt
- 3 tablespoons cornstarch
- ¼ teaspoon cinnamon
- ¼ teaspoon ginger
- ¼ teaspoon cardamom
- egg wash made with 1 egg beaten with 1 teaspoon water
- coarse sugar for sprinkling
