Salmon in creamy spinach sauce

Ingredients

• 4 salmon fillets
• 2 shallots, finely chopped
• 2 cloves garlic, finely chopped
• 1 tbsp butter
• 200 g baby spinach leaves
• 1 tsp salt
• 1 tsp pepper
• 1 dl vegetable stock or fish stock
• 3 dl double cream, or single cream for a lower fat content
• 1 tin butter beans, drained and rinsed
• 100 g sun-dried tomatoes
• 1 lemon (organic)
• 2 tbsp dill, finely chopped
