Ingredients

• 8 Donnybrook Fair jumbo sausages
• 2 tbsp olive oil
• 4 ripe tomatoes, peeled and finely chopped
• 2 onions, finely diced
• 2 carrots, finely diced
• 3 celery stalks, finely diced
• 2 large garlic cloves, grated
• 300ml white wine
• 1 x 400g tin of chopped tomatoes
• Bouquet garni (fresh parsley, thyme and bay leaf tied together with string)
• 150ml water
• Salt and freshly ground black pepper
• 1 x 400g tin of haricot beans, drained and rinsed
• Fresh flat-leaf parsley, chopped, to garnish
