• 6 tbsp olive oil
• 1 red onion, finely diced
• 2 garlic cloves, finely chopped

• handful basil, roughly chopped
• 75ml/2½fl oz white wine
• 10 cherry tomatoes, halved
• 300g/10½oz orzo
• 690g jar passata
• 1 tbsp sugar
• 150g/5½oz mini-mozzarella balls, halved
• bag rocket (optional)
• parmesan (optional)
• extra virgin olive oil (optional)
• salt and freshly ground black pepper
