Ingredients

• 2 potatoes (large, finely chopped)
• 1 onion (large, finely chopped)
• 1/2 cup carrots (finely chopped)
• 1/2 cup celery (finely chopped)
• 2 cans beer (12-oz. cans, or 3 c. water)
• 4 teaspoons instant chicken bouillon
• 1 cup half & half
• 2 cups Cheddar or American cheese (shredded)
• 1/8 teaspoon ground nutmeg
• 1/4 cup parsley (snipped)
