MOQUECA BAIANA (BRAZILIAN FISH STEW)

- 1 ginger
- 1 teaspoon paprika
- 1 lime, juiced
- 3 tablespoons vegetable oil

- 2 tablespoons palm oil

- 300ml water
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper
- 2 chicken stock cubes
- ½ teaspoon dried coriander leaves
- 2 tomatoes, seeded and sliced
- 6 parsley leaves, thinly diced
- 800g tinned chopped tomatoes
- 1 fresh pepper
- 1 teaspoon powdered curry
- 1 bowl cooked white rice
