• 1 cup fresh ricotta cheese
• 3 large eggs, separated
• pinch of Salt
• 1/2 teaspoon vanilla extract
• 1 lemon, zest and juice of
• 1 mixed berries, fresh (to decorate)
• ricotta, to decorate
• maple syrup, to decorate
• honey, or agave syrup, to decorate
