• 16 egg yolks, plus 2 for brushing dough
• 2 tbsp. olive oil
• ¹⁄₈ tsp. salt
• 4 cups baby spinach
• 1 tbsp. unsalted butter
• 1 medium yellow onion, roughly chopped
• 1 lb. ground chicken
• 9 button mushrooms, roughly chopped
• 4 cloves garlic, roughly chopped
• 1 egg
• ¹⁄₂ cup grated parmesan
• ¹⁄₈ tsp. nutmeg
• Zest and juice of 1 lemon
• Kosher salt and freshly ground pepper, to taste
• Tomato sauce, for serving
