Easy Easter dessert packed with rescued carrots, pear & walnuts. Topped with cream cheese icing and pantry goodies. Serves 8.
Ingredients
- 350g plain flour
- 2 tsp baking soda (level)
- ½ tsp salt
- 1 tsp ground cinnamon
- 4 eggs
- 400g brown sugar
- 280ml vegetable oil
- 1 tsp vanilla essence
- 200g grated carrots (skin on is fine)
- 100g grated pear (squeezed to remove excess liquid)
- 80g chopped walnuts
