Ingredients

• 1/2 pound Jones Dairy Farm Dry Aged Bacon, chopped
• 2 tablespoons olive oil
• 1 large russet potato, small dice
• 1 large sweet potato, small dice
• kosher salt and pepper, to taste
• 1 small zucchini, cut in half lengthways
• 1/2 green bell pepper
• 1/2 red bell pepper
• 1/2 yellow bell pepper
• 1/2 red onion
• 2-4 large eggs
