Carnitas Shepherd’s Pie – As Seen on Dinner: Impossible : Robert Irvine

Ingredients

• 1 tbsp blended oil
• 4 tbsp butter
• ¾ cup onion, diced
• ½ cup carrots, diced
• ½ cup celery, diced
• 1 tsp garlic, minced
• 2 lbs cooked pork carnitas, shredded (store bought)
• 3 tbsp tomato paste
• 1/3 cup all-purpose flour
• 2 cups beef broth
• 1 tbsp Worcestershire sauce
• 1 cup canned diced tomatoes with liquid
• ¾ cup canned corn, drained
• ¾ cup frozen peas
• 2 tsp fajita seasoning
• 2 tsp smoked paprika
• 2 tsp onion powder
• Salt and pepper, to taste
• 2 lbs potatoes, peeled and cut in quarters
• Water, as needed to cover the potatoes
• 6 tbsp butter
• 1 ¼ cups heavy cream
• 2 egg yolks
• ½ cup grated parmesan cheese
• 1 tsp kosher salt
