Creole White Beans | Shared Noms

Ingredients

• 1 cup dried cannellini or great northern beans (or 1 can prepared beans)
• if using canned beans, 2 cups chicken stock
• 4 small links andouille sausage, quartered lenghtwise, then cut into medium dice (I used a chicken sausage from Trader Joe's)
• 1 large yellow onion, small dice
• 1 medium green bell pepper, small dice
• 2 stalks celery, small dice
• 2 cloves garlic, minced
• 1 bunch kale, coarsely chopped
• crushed red pepper, to taste
• cayenne pepper, to taste
