Cheesy Swiss Meatloaf with Mushrooms and Bacon - Recipes Roost

Ingredients

• 1 egg, large
• 1 ½ pounds ground beef (use an 80/20 blend to keep it moist)
• 1 small onion, diced finely
• 2 minced garlic cloves
• 1 cup breadcrumbs (use panko or plain)
• ½ cup mushrooms, chopped small (button or cremini)
• 1 cup milk
• 1 teaspoon Dijon mustard
• 1 teaspoon Worcestershire sauce
• ½ teaspoon ground black pepper
• 1 teaspoon salt
• 1 teaspoon dried parsley (or a tablespoon of fresh parsley)
• 4-5 bacon strips, cooked crisp and crumbled
• Fresh parsley, roughly chopped (to sprinkle on top)
• 6-8 slices of Swiss cheese
• ½ cup cooked mushrooms
