Cheesy Swiss Meatloaf with Bacon and Mushrooms - cookrisp

Ingredients

• 1½ lbs ground beef (use 80/20 for best flavor)
• 1 large egg
• 1 cup milk
• 1 tsp Dijon mustard
• 1 cup breadcrumbs (any type works—panko or regular)
• ½ tsp black pepper
• 1 tsp Worcestershire sauce
• ½ cup chopped mushrooms (cremini or button)
• 1 small onion, diced finely
• 1 tsp dried parsley (or 1 tbsp fresh if you prefer)
• 2 minced garlic cloves
• 1 tsp salt
• 6–8 slices of Swiss cheese
• ½ cup mushrooms, sautéed nicely
• 4–5 crispy bacon strips, crumbled up
• Some fresh parsley, chopped for topping
