Phyllo Skillet Pie made with Imported sheep’s milk Manchego cheese from Spain and mushrooms.
Ingredients
- ¼ cup olive oil (divided)
- 4 large onions (sliced)
- 2 tsp kosher salt
- 1 ½ lb mixed chopped mushrooms
- 1 TB chopped fresh thyme
- 1 TB minced garlic
- Pinch red pepper flakes
- 2 tsp Worcestershire sauce
- ¼ cup dry sherry or white wine
- 8 oz ½ package phyllo, defrosted according to package instructions
- 2 eggs (beaten)
- 3 TB chopped fresh parsley
- 8 oz imported Manchego cheese (grated)
