Pear Clafouti

Ingredients

• 1 tbsp, unsalted butter – at room temperature
• 1/3 cup plus 1 tbsp, sugar
• 3, eggs – at room temperature
• 6 tbsp, all-purpose flour
• 1 1/2 cups, heavy cream
• 2 tsp, vanilla extract
• 1 tsp, grated lemon zest
• 1/4 tsp, kosher salt
• 2 tbsp, pear brandy – We used Poire William
• 2 or 3, Barlett pears – firm but ripe
