African Stew – Imitating Life

Ingredients

• 1 tbsp olive oil
• 1 onion
• 2 cloves of garlic, minced
• 2 cups sweet potatoes, peeled and diced
• ¾ cup brown rice
• ½ tsp salt
• 1 can of chick peas
• ¼ cup peanut butter
• 2 cups kale, chopped
• 2 tbsp lemon juice
• 1 tbsp soy sauce
