- 1/2 teaspoon ground black pepper (freshly ground)
- 1 tablespoon grass-fed butter (very cold , cut into tiny bits)
- giblets (gizzard, neck, heart, liver, wing tips, minced)
- 1 small onion (chopped)
- 2 tablespoons rendered goose fat (substitute bacon grease, or clarified butter)
- 3 cups beef stock ( substitute chicken, or vegetable stock)
- 1 bay leaf
- 3 to 4 sprigs parsley
- sea salt (to taste)
- pepper (to taste)
