  • 1 tablespoon grass-fed butter (very cold , cut into tiny bits)
  • giblets (gizzard, neck, heart, liver, wing tips, minced)
  • 1 small onion (chopped)
  • 2 tablespoons rendered goose fat (substitute bacon grease, or clarified butter)
  • 3 cups beef stock ( substitute chicken, or vegetable stock)
  • 1 bay leaf
  • 3 to 4 sprigs parsley
  • sea salt (to taste)
  • pepper (to taste)
