Lobster Risotto with Live Lobster - Clearwater

Ingredients

• 4 x 1.25 lbs Clearwater Live Lobsters
• 1 cup Arborio rice
• 2 cups Light chicken broth
• 2 bunches Young Asparagus
• 1 cup Heavy Cream, 35%
• 2 Tbsp Shallots, finely minced
• 10 Fennel seeds
• 1 Bay Leaf
• 4 Tbsp Olive oil
• 1 cup Good quality Sea Salt (Fleur De Sel)
• 4 Lemons, juice and zest
• 4 Tbsp Shaved Parmigiano Cheese
• 1 Tbsp Balsamic or red wine vinegar
• pinch Turmeric
• pinch Cracked Black Pepper
