  • 2 tablespoons Vegetable oil
  • 1 cup Peanut butter (natural, unsweetened)
  • 2 cups Vegetable or Meat Broth
  • 2 Tomatoes, chopped
  • 2 Carrots, peeled and sliced
  • 2 Potatoes, peeled and cubed
  • 1 Sweet Potato, peeled and cubed
  • 1 Bell Pepper, seeded and chopped
  • 1 Scotch Bonnet Pepper (optional, for heat)
  • 1 tablespoon Tomato Paste
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • Salt and Pepper to taste
  • Fresh cilantro or parsley, chopped (for garnish)
