CHICKEN ELIZABETH Chicken Elizabeth was created by the London Cordon Bleu Cookery School to serve at the Coronation Banquet of Queen Elizabeth II in 1953.

- 1 large onion, peeled and quartered
- 1 large carrot, peeled and quartered
- 2 stalks celery, sliced
- Bouquet garni
- 1 teaspoon peppercorns
- 4 boneless, skinless chicken breasts
- 3 tablespoons flour
- Grated zest
- 1 medium chicken (1½-1¾/3-3½ lb each)
- Salt and freshly ground back pepper
- 30 g/2 tablespoons butter
- 75 g/2½ oz Parma ham, chopped
- 2-3 sprigs rosemary, crushed
- 125 ml/1/2 cup white wine
- 1 teaspoon ground pepper
