ROAST BEEF WITH LEMON HERB POTATOES – A Spice Affair.

Ingredients

• 2-2.5 kg Prime Rib Roast or beef roast of your choice (4-5 lb)
• 8 tbsp unsalted butter, room temperature
• 1 ½ tbsp A Spice Affair’s Roast Beef Seasoning or Ultimate Meat Rub
• 1 tbsp fresh rosemary, chopped
• 3 garlic cloves, minced
• 1 tsp Himalayan Pink Salt
• 1 tsp Black Pepper
• 8 medium potatoes
• ¼ cup olive oil
• 2 tbsp melted butter
• 3 cloves garlic, minced
• 1 tbsp parsley, chopped
• 1 tsp A Spice Affair’s Herbs of Provence, Italian Herbs or Greek Herbs
• 1 tsp A Spice Affair’s Lemon Pepper
• 1 tbsp lemon juice
• 1 tbsp honey
• ¼ tsp Himalayan Pink Salt
