• 8 oz. orecchiette pasta
• 1 lb. boneless pork loin chops, (½-inch thick) trimmed, seasoned with salt and black pepper
• 8 oz. cremini mushrooms, stemmed and sliced
• ¼ cup minced shallots
• 1 Tbsp. minced fresh garlic
• 2 tsp. minced fresh rosemary
• ½ cup dry white wine
• 1 ½ cups heavy cream
• ½ cup grated Pecorino Romano
• ¼ tsp. freshly grated nutmeg
• Salt and red pepper flakes to taste
