  • 1 cup boiling water
  • 3 teaspoons olive oil
  • 1/2 pound fresh cremini or white mushrooms, sliced (1-1/2 cups)
  • 1 large onion, chopped (3/4 cup)
  • 1 medium carrot, chopped (1/2 cup)
  • 1 medium celery rib, chopped (1/2 cup)
  • 1 large clove garlic, finely chopped
  • 3 cups chicken, beef, vegetable, or mushroom stock
  • 1/4 cup pearled barley
  • 1/4 teaspoon salt
  • Freshly ground black pepper
  • 1 tablespoon chopped fresh dill leaves
  • 1 tablespoon chopped flat-leaf parsley
