- 250g plain flour
- 125g salted butter, chilled
- 2-3 tablespoons of ice-cold water
- 400g fresh (not pickled) beetroot
- 2 wee rounds of goats’ cheese (100g-200g)
- Balsamic glaze (comes in a squeezy bottle from all major supermarkets)
- Salt and pepper, to taste
- Peppery rocket, to serve
