Ingredients

• 2 tbsp olive or cooking oil
• 300g diced beef
• 1 onion, finely chopped
• 2 garlic cloves, finely chopped
• 1 carrot, chopped
• 1 celery stick, chopped
• 6 pickling onions or small shallots (skin left on)
• 2 tsp fresh thyme (or 1 tsp dried thyme)
• 1 bay leaf
• 1 tbsp Worcestershire sauce
• 250ml Guinness (or any beer of your choice)
• Salt and pepper (to taste)
