Low Fodmap crispy pork belly with tangy peanut soy sauce and sweet coconut rice is my idea of the perfect meal!
Ingredients
- 700 boneless pork belly (rind scored)
- 1 olive oil
- 1.5 rock salt
- Peanut Soy Sauce
- 1 brown sugar
- 1.5 rice wine vinegar
- 2.5 soy sauce
- 1 peanut butter
- grated/crushed ginger
- garlic infused oil
- 0.5 sriracha sauce
- 1 long grain white rice or basmati rice (uncooked amount)
- 0.5 coconut milk (canned)
- 1.5 water
- 3.5 bok choy (pak choi) (chopped)
- 0.25 sesame oil
- sesame seeds (just add a sprinkle)
