Chicken Pot Pie Gelson's

Ingredients

• 4 Tbsp unsalted butter
• 1 medium onion, diced medium
• 1 medium baking potato, peeled and diced medium
• 2 celery stalks, diced medium
• 3 medium carrots, diced medium
• Kosher salt, to taste
• 2 garlic cloves, minced
• 2 tsp minced Gelson’s organic thyme leaves
• ¼ cup dry white wine
• ¼ cup all-purpose flour
• ½ cup heavy whipping cream
• 2 cups chicken stock
• 1 cup peas, fresh or frozen
• 3 cups Gelson’s BBQ rotisserie chicken, cut into bite-size pieces
• 2 Tbsp chopped parsley leaves
• 1 Tbsp lemon juice
• Black pepper, to taste
