Ingredients

• Serves 4
• 12 large scallops
• 12 streaky bacon rashers, trimmed so they are less wide than the scallops
• 2 tsp Old Bay ® Seasoning
• 3 shallots, chopped
• 150 ml dry white wine
• 90 ml white wine vinegar
• 180 g unsalted butter, chopped into 2cm pieces
• Pinch of white pepper
• Chives to garnish
