Ingredients

• 1 onion, chopped
• 1/2 red bell pepper, diced
• 3 cloves garlic, finely chopped
• 1/2 fresh red chili pepper, seeded and finely chopped
• 2 tablespoons (30 ml) olive oil
• Salt and pepper
• 3 spicy Italian sausages
• 2 cans 4 oz (125 g) snails, rinsed and drained
• 1/2 cup (125 ml) white wine
• 1 can 19 oz (540 ml) diced tomatoes
• 225 g cremini mushrooms, quartered
• 1 sprig thyme
• 1 bay leaf
• 2 tablespoons (30 ml) fresh parsley, chopped
