Spanish-Style Mussels with Chorizo and Tomato | Tourism PEI

Ingredients

• 1/4 cup olive oil
• 1 yellow onion, minced
• 2 cloves of garlic, minced
• 1 tsp smoked paprika
• 2 links dry-cured chorizo sausage, sliced thinly
• 1 tsp dried oregano
• 1/4 cup dry white wine
• 1 pint cherry tomatoes, cut in half
• 5 lbs PEI mussels, cleaned and rinsed
• 1/2 bunch of cilantro, rough chopped
