Paleo Satay Sauce With Cashews| Eat Drink Paleo
This paleo satay sauce recipe uses cashews instead of peanuts making it a healthier alternative. Use with grilled chicken, beef, prawns and vegetables.
Ingredients
- 3 small red chillies (deseeded and roughly diced)
- 2 cloves garlic (roughly diced)
- 1 stalk lemongrass (outer layer removed and roughly diced)
- 3 small shallots (peeled and roughly diced)
- 1.5 tablespoons coconut oil
- 2 teaspoons curry powder
- 1 teaspoon turmeric powder
- 3 cups unsalted (raw cashews)
- 1.5 cups water
- 150 ml coconut milk
- 1/2 lime (juice)
- 3 tablespoons coconut aminos (or 2.5 tbsp. Tamari)
- 2 teaspoons fish sauce
- Pinch of sea salt
- 1.5 tablespoons honey
- You will need a food processor or a large mortar and pestle (and/or a blender)
