Ingredients

  • 1 package organic silken tofu
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped, about a 1/2 cup
  • ½ cup sun dried tomatoes, dry packed, chopped
  • 2 cups packed fresh spinach leaves, chopped
  • 3 medium cloves garlic, minced
  • 3 tablespoons nutritional yeast
  • 1 tablespoon tahini
  • 1 tablespoon mellow white miso
  • 1 teaspoon turmeric
  • ½ teaspoon coarse salt
  • ½ teaspoon black salt
  • 2 tablespoons fresh chopped herbs (basil, chives, or thyme), reserve some for garnish
  • 2 tablespoons vegan butter (I used Earth Balance)
  • 2 tablespoons all-purpose flour
  • 1 cup water
  • 2 tablespoons fresh lemon juice
  • ¼ teaspoon salt
  • Pinch of cayenne pepper
  • Pinch of ground white pepper
  • 1 package vegan smoked deli slices, (I used Tofurkey Smoked Deli Slices, with the edges removed)
  • 1 tablespoon vegan butter (I used Earth Balance)
  • 1 tablespoon real maple syrup
  • 1 package vegan English muffins
  • 1 avocados, pitted and sliced
