Mains - Spanish Cod Stew

Ingredients

• 800 g Cod fillets skin removed cut into chunks
• 500 ml Tomato passata
• 400 g Cooked baby New potatoes
• 120 g Chorizo sausage finely chopped
• 100 g Black olives pitted cut in half
• 120 ml White wine
• 1 Onions large finely slices
• 1 Fish stock cube or gel pot
• 2 Garlic cloves finely chopped
• 2 tbsp Fresh flat-leaf parsley chopped
• 1 tbsp Sweet smoked paprika
• 1 tbsp Sherry vinegar
• 1 tsp Caster sugar
• 1/2 tsp Newly ground Black pepper
• 3 tbsp Olive oil
