• 1 ¾ Cups buttermilk
• 2 eggs, SEPARATED!
• 4 Tablespoons butter
• ½ teaspoon vanilla
• 1 ½ Cups finely grated carrots
• Cooking spray or butter for griddle
• 1 Cups raisins
• 1 Cup walnuts, chopped
