• For the Filling:
• 2 large pears, cored, peeled and diced
• ½ cup granulated sugar
• 1 tbsp lemon juice
• 2 tbsp orange liquor
• 2 oz mascarpone cheese
• ¾ cup confectioner’s sugar
• 1 tsp vanilla extract
• 1 cup heavy cream
• 3 tbsp water
• 1 packet gelatin
• For the Almond Meringue Crust:
• 1 ¼ cups almond meal
• 5 large egg whites
• ½ tsp kosher salt
• For the Bittersweet Chocolate Limoncello Drizzle:
• 3 1/2 oz Perugina Bittersweet Chocolate Bar 70%, broken up
• 3 1/2 oz Perugina Dark Chocolate Limoncello, broken up
