- 1 tbsp olive oil
- 1/2 cup pine nuts
- 4 scallions (thinly sliced)
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1 cup instant couscous
- 2 tbsp fresh flat-leaf parsley (chopped)
