• 1 tablespoon olive oil
• 5 ounces diced COLUMBUS® Pancetta
• 1 tablespoon butter
• 1 large leek, white and light green parts only halved lengthwise and thinly sliced crosswise
• 1 teaspoon kosher salt
• 1/2 cups heavy cream
• 1 tablespoon chopped fresh thyme leaves
• Freshly ground black pepper, to taste
• 6 ounces pappardelle pasta
• 1 1/2 ounces finely grated Parmigiano-Reggiano cheese
