Ingredients

• 6 oz (170 g) guava paste such as Goya®, cut into small chunks (about 10 tablespoons)
• 1/3 cup (75 ml) water
• 1 1/2 tsps (7 ml) fresh lemon juice
• 1/4 cup (60 ml) coarsely crumbled Lotus® Biscoff Cookies
• 1/4 cup (60 ml) shelled pistachios chopped
• 1/2 tsp (2 ml) cardamom ground
• 1 cup (250 ml) heavy cream
• 1/4 cup (60 ml) confectioners' sugar
• 1 1/2 tsps (7 ml) pure vanilla extract
• 1/2 tsp (5 ml) imitation coconut extract
