Fish Tales

Ingredients

• 4 large baking potatoes, scrubbed clean with the skins on
• 2 tbsp crème fraîche
• 1 tbsp yoghurt
• zest and juice of 1/4 lemon
• 1 tsp grated horseradish
• 3 sprigs of dill, finely chopped, plus extra leaves for garnish
• 150 g Fish Tales smoked Atlantic salmon
• 1 spring onion, thinly sliced into rings
• extra virgin olive oil
• salt and pepper
