• Panko (Japanese bread crumbs) as needed
• Vegetable oil as needed
• Chicken stock as needed
• 2 cups dried black currants
• 1/2 cup diced shallots
• 1/2 cup packed brown sugar
• 1 1/2 cups sherry vinegar
